Enjoy the fruits of your labor opening a coconut and sit on the porch in the sunshine sipping this smoothie.

  • Meat of one young coconut
  • 2 handfuls spinach
  • Juice of 1 lime
  • 1/2 c cashews
  • 1/2 tsp vanilla
  • 1 c water
  • (Optional) Few sprigs mint
  • (Optional) Ice

Directions: Open the coconut (instructions here), scoop out meat with a silicon spatula and clean off the woody bits. Add the rest of the ingredients and blend and enjoy!

Options/tips: This one is very nice chilled – reduce water and add ice if desired. I prefer fresh mint if you are going to use it. Lime green color, lime green taste.
