A spicy, flavorful go-to meal for all occasions.

  • 1/2 head of cauliflower, cut into florets
  • Large handful of cilantro, de-stemmed
  • 1 jalapeno, seeded
  • 1 small tomato, diced
  • 1/2 tsp cumin
  • Juice of 1/2 lemon
  • Few shakes of salt
  • Few shakes of pepper

Directions: Pulse in food processor until cauliflower is rice sized, and ingredients are well mixed.

Options/tips: Do not over process the cauliflower – it becomes a wet mess. Serve with a few avocado slices on top if desired!
